Australia Day Cupcakes

Yay! Its almost Australia Day. Time for that family BBQ,  fun in the sun and generally a day to be thankful for all things Aussie! So lets breakout the Lamingtons and Pavlova's! Well in this case Lamington and Pavlova Cupcakes lol.

First up is the Lamington cupcake. Vanilla cake with a cream filled option topped with Chocolate Ganache and coconut.




And of course there is the ever popular pavlova. I have had the pavlova on our menu for a while now and being uniquely Australian ( well some would argue ) who wouldn't want one of these on Australia day :)
Vanilla cake topped with a meringue basket filled with cream and topped with fresh fruit.

Cake Pops!

So i decided to have a go at making some cake pops as they are becoming so popular lately and look like a lot of fun to make. I also make a lot of cupcakes with fillings and usually have a bit of waste because i don't use the center of the cupcake so it was a great way for me use it!
I had a blast! These cake pops are totally addictive! You can do so much with them. I made White choc mud, Choc Mud, Red Velvet and peanut butter cake pops and my family and friends couldn't get enough of them. So i have added them permanently to the menu for $20 per dozen. They are like a cute little bouquet of cakes. I have had a few queries about doing them for center pieces at weddings too. What a great idea!
They sold very well for Christmas presents and i think they will be another favourite for valentines day.

The Tiramisu Cupcake

Who doesn't love Tiramisu. My husband Matt inspired me to come up with this one being its his favourite dessert.
The cupcake is a classic italian sponge cake soaked in a espresso and Kahlua syrup then topped with Mascapone cream.
Pure indulgence!



The Blue Berry Cupcake ( Gluten Free )

I had a lot of requests for gluten free options so this is the first one to make it onto the menu.
I will be honest with you. Until i did some research into gluten free cooking i really didn't know much about it and was a bit sceptical about how the cake was going to turn out. I will not sell a cake that i wouldn't want to eat myself.
This cake is one of my favourites. With Fresh blueberries through the cake mix its so light and my kids absolutely love it when i make these. They are always hoping for extras lol.
Topped with fluffy cream cheese frosting you have to taste to believe how great these are!



The Ferrero Rocher Cupcake

THE best seller at Plush n Lush Cupcakes has definitely got to be the Ferrero Rocher Cupcake!
Rich Chocolate cake with a hazelnut mousse center and topped with hazelnut chocolate ganache and a chocolate shard.

The Cookies and Cream Cupcake

Each week i have 4-5 flavours available and i will be posting about each one so here is the first.
The oh so popular Cookies and Cream cupcake really is one of the best sellers.  A ultra moist chocolate mud cake topped with Oreo based cookies and cream mixture and of course a whole Oreo Biscuit.

Hi all and welcome to the new Plush n Lush Cupcakes blog. Wow it had been a while since i have done this. One of my new years resolutions was to create a new blog for everyone to view my little creations and keep up to date with what Plush n Lush is up to :)
So first up happy new year everyone! I'm so excited about this year. Have plenty coming up. Lots of weddings, birthdays and new flavours coming to the menu :)
Plush n Lush will also be supplying to a few cafes and restaurants around Albury/Wodonga this year. So excited to be expanding from just selling the cupcakes from home and seeing them in shops for everyone :)


Plush n Lush cupcakes has also changed to a new rotating weekly menu this year. This will give everyone a chance to try more of out flavours as we have over 30 available now and more to come including a new profiterole and toffee cupcake and Mexican coffee cupcake thanks to Kathryn and Sammy who won the suggest your own flavour competition on our face book page.  They each won themselves a 1/2 dozen box of their new flavours and we will be working on them very soon and will blog about them and post pics when they are finished so watch this space.
